That’s the problem. I really love salmon. So much so that I have said out loud several times that if I had to choose one type of animal protein to live the rest of my life, it would be salmon. Believe it or not, there are five main types of salmon. (There are seven types, but you’ll actually only find five types in the states.) They can be small, weighing about five pounds, or they can be huge, weighing about 126 pounds!
Some salmon live in fresh water, some in salt water, and some in both, depending on the season. All five major salmon species are of the Pacific variety.
Salmon is an excellent source of animal protein, a near-perfect source of omega-3s (and what you’ll find in most fish oil capsules), and is also rich in protein, B vitamins, calcium, potassium, and antioxidants. good It has fewer calories and saturated fat than many red meat options, and no carbohydrates, fiber, or sugar.
Eating salmon can help lower cholesterol and is a great option for Meatless Monday. As you may have noticed from my various salmon recipes, we eat quite a lot of it! (For another great recipe, try my Air Fryer Salmon.)
Ways To Make Perfect Salmon At Home
Baked salmon on a rimmed baking sheet is cooked until the internal temperature reaches 110 to 140 degrees at the center of the thickest part of the flesh. Typically, four to six minutes per side of baking or grilling is enough to reach this temperature. Salmon can be served medium rare to medium rare.
If you don’t have a meat thermometer, there are several ways to tell if your salmon is done.
As the piece of salmon cooks, it changes color from red to pink. You can check for doneness by cutting the thickest part of the fish with a knife. It should still be slightly translucent in the center and starting to fall apart.
You only need to bake the salmon for about 12-15 minutes. Any more and it will be dry and overcooked.

Storing a piece of salmon is easy. Simply place in an airtight container or wrap tightly in aluminum foil and refrigerate. It will keep for about 3-4 days.
To reheat salmon in the oven, heat it slowly and over low heat and add a little water to add moisture. I also like to reheat all types of salmon in the oven or in a pan on the stove rather than in the microwave, as microwaving the meat dries out faster.

If you want to cook perfectly flaky salmon with crispy skin, there are a few secrets you need to know.
Brush the skin with oil first rather than adding it to the pan. This not only prevents the oil from splattering everywhere, but also prevents it from smoking, reducing any fishy smell that may linger in the kitchen.
Second, it’s best to use an oil that’s suitable for high-heat cooking (like avocado oil) because to get a crispy skin, you’ll have to cook the salmon over medium-high heat.
Next, you’ll need a well-seasoned (or enameled) cast iron skillet to keep the salmon from sticking. Cast iron retains heat well, resulting in that crispy crust you desire. If you don’t have a well-seasoned pan, check out our cast iron guide for tips on buying one or instructions on re-seasoning one you already have.

When ready, start skin side down. It is important to let the steaks rest and cook at a high enough temperature long enough for the skin to crisp up (~6-7 minutes over medium heat).
At this point, the salmon will be about half to three-quarters done on the sides (see photo below).
This means it’s time to flip, squeeze in a little lemon juice, and sear the other side for about 1-2 minutes (or up to 4 minutes for thicker steaks).
You can tell the salmon is done because it will change color to a lighter shade of pink and flake easily with a fork. For food safety purposes, a food thermometer inserted into the center of the steak should read 145 degrees Fahrenheit (63 Celsius). Once the dish is completely cooked, you can serve it with your favorite side dishes!

Yes! And when the skin is crispy, like in this recipe, it’s our favorite part. To keep it crispy, it is best to serve the fillet skin side up.
Skin is rich in omega-3 (healthy fat) in addition to other nutrients. If you’re going to eat the skin, keep in mind that it’s especially important to catch wild-caught fish from as clean waters as possible ( source ).

*Cooking time depends on the thickness of the steaks. Super thick (1.5 inches or more) will take up to 10 minutes on the first side and 3-4 on the second. *The reason the fish is oiled rather than added to the pan is to prevent it from smoking: when the pan heats up, all that oil will reach its smoking point (which is why it often smells fishy the next day if it doesn’t have good ventilation). *A ~4 oz raw steak will cook to ~3 oz. *Nutrition information is an estimate based on 4 ounce steaks, avocado oil, and 1/8 teaspoon each sea salt and black pepper.
